Rain is the soup de jour here. Every day! We are unable to cross our creek crossing at present but this rises and falls quite quickly, so not a problem. I try to have plenty of food stockpiled for such problems. The trouble is that most of this food is fattening.
I made a yummy damper today as we are out of bread. Now, I don't eat bread much at all but I made a guts of myself today with the hot damper. It was lovely and crusty on the outside and soft and moist on the inside. Butter and syrup on some and Tomato Relish on another.. too die for.
It will take me at least 3 days to shed this weight that I know I will gain. Not fair!
The Damper recipe is just sifted Self Raising flour, about half a cup of oil. I used olive oil. Salt and about 3 tablespoons of powdered milk. Mix to stiff consistency with water and bake either in a container or tray @ 200 degrees Celsius for 20 minutes or less.
I must admit the pleasure of eating this food probably out weighs the weight problem it will cause.

Never heard of a damper, but being a bread-aholic, it sound pretty good. I could eat most breads unless it is too hard to bite. Keep your head above the water! The pictures are beautiful, but I know that they can be dangerous if crossed.

Gosh, that's no good:( So glad you've got damper makings in the meantime! Our flooding has just started drying up last week, so I hope we can send some sun your way too
